2.5cm piece of fresh ginger
1 cup water
1 dash maple syrup or honey
1 slice of lemon or orange

Combine a 2.5cm piece of ginger - unpeeled and finely sliced with 1 cup of fresh water in a saucepan

Bring to a boil and simmer gently for 3-5 minutes

Drain through a fine sieve to remove the ginger pieces

Serve with your choice of:
* thin slice or lemon or orange for some complimentary acidity
* a light drizzle of honey or maple syrup to temper the fiery ginger-ness
