 6 tbsp Chopped fresh ginger (no need to peel first!)
 1 cup Raw sugar
 4 cups Fresh water

Combine ginger, sugar & water in a saucepan

Bring to a slow boil stirring to allow the sugar to dissolve

Simmer gently for 2-3 minutes

Allow to cool then strain through a fine sieve into a sterilised container

Makes about 1 litre of ginger syrup | Keep refrigerated and use within 14 days
